SIMPLE KETO GRAVY
Makes 8 servings
Bone broth and xanthan gum make a Keto-friendly chicken or beef gravy in a snap. The xanthan gum works to thicken the gravy, replacing the flour or cornstarch in your Mom’s traditional gravy recipe. It might take some practice getting used to working with xanthan gum, so just remember; less is more.
INGREDIENTS
4 cups chicken or beef bone broth, plus more as needed
½ teaspoon xanthan gum, plus more as needed
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS
1. Bring broth to a boil in a medium saucepan over medium heat. Reduce the heat to medium-low and simmer, uncovered, for 5 minutes to allow the flavors to intensify.
2. Remove from the heat and whisk in xanthan gum. Let rest 3 minutes, then taste and add additional xanthan gum if you’d like it thicker. Beware—too much xanthan gum will turn your broth into gel! If it gets too thick, add additional hot broth as needed to achieve the desired thickness. Add salt and pepper to taste.
