Roasted Fruit Medley
Makes 6 servings
Just as roasting brings out the best flavors in vegetables, roasting fruit allows their natural sugars to ooze out and caramelize into a nutty, toasty, buttery syrup, creating a mouth-watering sauce. If you really want to wow your family, serve this delightful Roasted Fruit Medley over ice cream or gelato!
INGREDIENTS
3 apricots, washed,
pitted, and quartered
3 cactus pears, washed,
stem and blossom ends
trimmed, and quartered
12 small fresh figs,
washed and halved
¼ cup butter, room
temperature
3 tablespoons brown
sugar
3 tablespoons honey
1 teaspoon vanilla
extract
1 teaspoon ground
cinnamon
½ teaspoon nutmeg
INSTRUCTIONS
1. Preheat oven to 375°F and line a cookie sheet with parchment paper.
2. Dry fruit, place all pieces cut side up onto the prepared cookie sheet, and set aside.
3. Combine butter, sugar, honey, vanilla extract, cinnamon, and nutmeg in a bowl, mixing well.
4. Spread butter mixture onto the fleshy side of each piece of fruit and roast in the oven for 12 minutes.
5. Remove from oven and allow roasted fruit to rest for 10–15 minutes.
6. Serve warm or at room temperature. Refrigerate leftovers in an airtight container for up to 3 days.
