Ratatouille Salad
Makes 4 servings
Ratatouille isn’t just reserved for French bistros and elite chefs. This Ratatouille Salad is a fresh take on a restaurant favorite, created in the comfort of
your own home. Made with eggplant, zucchini and tomatoes, it’s sure to
help you meet your daily vegetable goal without you even knowing. This
salad is served on golden-brown artisan bread, then topped with gorgeous
mozzarella cheese to complete the Mediterranean experience. It’s a sneaky
way to eat your vegetables and feel like royalty doing it!
INGREDIENTS
1 red bell pepper, chopped into ½-inch pieces
1 small eggplant, sliced
1 medium zucchini, sliced
2 Campari tomatoes, cut in half
2 tbsp. olive oil, divided
½ tsp. salt
½ tsp. pepper
4 cups arugula
¼ tsp. fresh basil, chopped
2 tbsp. white wine vinegar
2 large thick slices of sourdough or country bread
1 clove garlic, cut in half
¼ cup fresh mozzarella (optional)
INSTRUCTIONS
1. Preheat the grill to medium-high.
2. In a large bowl, mix bell pepper, eggplant, zucchini and tomatoes with 1 tablespoon of the oil, salt and pepper. Grill until lightly charred and softened, 1–2 minutes on the cut sides only for tomatoes and 3–4 minutes on each side for pepper, eggplant and zucchini. Transfer eggplant and tomato back to the bowl and transfer the rest of the vegetables to a cutting board.
3. Chop peppers and zucchini and add to the bowl. Add arugula, basil and vinegar, and toss to coat.
4. Brush the slices of bread with the remaining tablespoon of oil and toast until lightly browned, 1–2 minutes on each side, then rub both sides with the cut sides of the garlic.
5. Cut each slice of bread in half and place one-half on each plate. Top each bread slice with the salad and its juices.
6. Garnish with mozzarella, if desired, and serve immediately
