Pickled Herring with Beet Dip Crostini
Serves: 6
These crostini look incredible and taste just as good. They are the perfect combination of flavors, colors and textures. Light, bright and uplifting, the dish offers a great mix of earthy, sweet and sour flavors, each mouthful offering a taste sensation. If you’re after a super quick lunch option, we suggest you make the dip ahead of time. Store it in a tightly covered glass jar in the refrigerator for up to one week. Any leftover dip can be used as a snack with vegetable sticks or slices of toasted pita bread.
INGREDIENTS
FOR THE DIP:
1 lb. beets, cooked until soft, then
peeled, and cut into chunks
4 oz. labneh
2 tbsp. minced shallots
1 tbsp. apple cider vinegar
½ tsp. ground mustard
½ tsp. dried thyme
½ tsp. dried tarragon
TO SERVE:
8 slices French baguette, toasted
1 tbsp. olive oil
12 oz. pickled herring, drained
½ Spanish onion, peeled and thinly sliced
½ gherkins, thinly sliced
2 tbsp. freshly
squeezed lemon juice
INSTRUCTIONS
1. Brush the bread slices with a little olive oil on each side.
2. Place the bread either on a hot grill plate or under a hot broiler and grill on both sides until lightly brown. Remove from the heat and set aside.
3. Meanwhile, combine all the dip ingredients in a food processor or blender and process until smooth.
4. Adjust the seasonings, adding more vinegar to taste.
5. Slather each toast slice with the dip and top with 2 to 3 slices of the pickled herring, slices of the Spanish onion and gherkin, and a squeeze of lemon juice over the top.
6. Serve immediately.
7. Refrigerate any remaining dip in a tightly sealed container for up to 7 days.
