Peach Apricot Sherbet
Makes 6 servings
Sherbet is ice cream’s lighter cousin. Using only 4 simple Ingredients, this fruit-rich frozen treat takes on a beautiful pastel yellow color. With its tangy balance of sweet and tart, this recipe will rival your go-to ice cream.
INGREDIENTS
3 large peaches, peeled, pitted, and sliced
3 apricots, peeled, pitted, and sliced
1 (14-oz.) can sweetened condensed milk
1 teaspoon vanilla extract
INSTRUCTIONS
1. Arrange the fruit slices in a single layer on a parchment-lined cookie sheet and freeze for 4–5 hours.
2. In a blender, combine the fruit, condensed milk, and vanilla. Process until smooth and creamy with the texture of soft serve.
3. Serve immediately. Freeze leftovers in an airtight container for up to 3 days.
