NOT-CORN BREAD

The thing I love about this recipe is the way the almond flour perfectly replicates the crumble of a good corn bread. Add a little coconut sugar to the mix if you like it sweet. For a more intense savory variation, add 1/3 cup shredded mild cheddar cheese, crumbled cooked bacon, and a small can of diced green chilies to your mixture before baking.
INGREDIENTS
½ cup finely ground almond flour
1/3 cup coconut flour
1 teaspoon salt
½ teaspoon baking soda
3 large eggs
½ cup whipping cream
¼ cup butter, melted, plus additional for serving
INSTRUCTIONS
1. Preheat the oven to 325°F.
2. Whisk together almond flour, coconut flour, salt, baking soda, eggs, and cream until combined. Stir in melted butter until thoroughly incorporated.
3. Pour mixture into a greased 8-x-8-inch baking dish. Bake 25 minutes, until browned and a toothpick inserted into the middle comes out clean.
4. Cool before serving with butter.
