Lebanese Beef Shawarma & Tahini Sauce

Beef shawarma is found on almost every street in the Middle East, but thanks to this recipe, you don’t need to sit on an airplane just to get your hands on this deliciously juicy dish. Served with homemade tahini sauce, this protein-rich dinner will keep you satisfied long into your fast. 

 

INGREDIENTS

For the beef shawarma

¼ cup white vinegar
2 tablespoons extra-virgin olive oil
Juice of 1 medium lemon
Zest of 1 medium lemon
4 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon ground cardamom
½ teaspoon ground cinnamon
½ teaspoon dried oregano
½ teaspoon paprika
2¼ pounds flank steak, cut into strips
1 onion, sliced
1 (10-inch) pita bread, warmed

For the tahini sauce

½ cup tahini
2 tablespoons lemon juice
2 garlic cloves, crushed
½ teaspoon salt

 

INSTRUCTIONS

1. To make the shawarma, whisk together the vinegar, olive oil, lemon juice, lemon zest, garlic, cumin, salt, pepper, cardamom, cinnamon, oregano, and paprika in a large bowl until combined.
2. Add the flank steak and onion and toss to combine.
3. Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for 1–2 hours.
4. When ready to cook, place a skillet over medium-high heat and add the marinated steak strips. Cook for 4–6 minutes, turning occasionally, until caramelized.
5. Meanwhile, to make the tahini sauce, combine the tahini, lemon juice, garlic, and salt in the bowl of a food processor and blend until smooth.
6. Transfer the beef shawarma to a serving plate and serve.
