Kofta Kebab
Makes: 10 skewers
This is an authentic, must-try recipe for Kofta Kebab: ground beef and lamb mixed with fresh parsley, onion, garlic and Middle Eastern spices. These kebabs will feed a crowd, and you can serve many sides and salads with them.
INGREDIENTS
1 medium yellow onion, quartered
2 cloves garlic
1 bunch parsley, stems removed (about 2 packed cups parsley leaves), plus more for serving
1 lb. ground beef
½ lb. ground lamb
1 slice bread, toasted until browned and soaked in water until fully toft
1 tsp. salt
1 tsp. black pepper
1½ tsp. ground allspice
½ tsp. cayenne pepper
½ tsp. ground green cardamom
½ tsp. ground sumac
½ tsp. ground nutmeg
½ tsp. paprika

INSTRUCTIONS
1. Begin by soaking 10 wooden skewers in water for 30 minutes to 1 hour. Take them out of the water when you are ready to begin. Lightly oil the grates of a gas grill and preheat to medium-high for about 20 minutes. Prepare the pita bread and fixings and any other sides before you begin grilling.
2. In a food processor, chop the onion, garlic and parsley.
3. Add the beef and lamb. Squeeze all the water out of the bread and add to the food processor, then add all the spices. Run the processor until the ingredients are well combined and form a pasty mixture.
4. Transfer the meat mixture to a large bowl. Take a fistful of the mixture and mold it onto a wooden skewer to create a kebab about 1 inch thick. Set the skewered kebab on a parchment paper–lined tray. Repeat the process until you have no meat left.
5. Place the kebabs on the grill. Grill for 4 minutes on one side, then turn over and grill for another 3 to 4 minutes.
6. Serve your kofta kebabs immediately with pita bread, tahini, and tomato and onion wedges.
