KETO FRENCH ONION SOUP WITH PORK RINDS

Here’s a not-so-secret tip for anyone trying Keto for the first time: pork rinds are Keto and they can be used to replace just about anything crunchy in recipes with lots of flavor. In salads and in this rich French onion soup, they are the perfect stand-in for crunchy croutons.
INGREDIENTS
¾ cup unsalted butter
2 cups sweet onion, thinly sliced
¼ cup green onions, chopped
1 teaspoon erythritol sweetener (such as Swerve)
2 tablespoons garlic, minced
1/8 teaspoon xanthan gum
4 cups beef broth
1 tablespoon cider vinegar
1 teaspoon dried thyme
1 bay leaf
Salt, to taste
Cracked black pepper, to taste
3 oz pork rinds or chicharrones
½ cup Swiss cheese, shredded
½ cup Parmesan cheese, grated
INSTRUCTIONS
1. Heat butter in a frying pan over medium-low heat. Add onions and sauté until soft, about 8 minutes. Add sweetener and continue to cook until onions begin to caramelize, approximately 5 more minutes. Mix in garlic and xanthan gum, then add broth, vinegar, thyme, bay leaf, salt, and pepper. Reduce the heat to low, cover, and simmer for 20 minutes.
2. Meanwhile, preheat the broiler. Spread pork rinds on a baking sheet and broil until hot and crisp, about 1 hour. Watch them so they do not burn!
3. When soup is ready, ladle it into 4 oven-safe bowls, and distribute hot pork rinds among them. Top each bowl with a sprinkling of Swiss and Parmesan cheese, and broil in the oven until cheese has melted and is beginning to brown, about 5 minutes. Serve immediately.
