Greek Pasteli

If you love a sweet snack, but prefer healthy options, this treat is for you! In Greece, pasteli is traditionally offered to both the bride and groom on their wedding day, as the sesame seeds symbolize fertility and the honey represents a sweet life. Known as the world’s first energy bar, pasteli was invented to fuel the original Olympians.
INGREDIENTS
½ cup maltitol syrup
1 cup sesame seeds
½ cup sunflower seeds
INSTRUCTIONS
1. Lay out two large sheets of parchment paper on the counter and coat them with non-stick cooking spray.
2. Place the maltitol syrup in a saucepan over medium-high heat and bring it to a boil.
3. Stir in the sesame seeds and sunflower seeds, then immediately pour the mixture onto one of the parchment paper sheets.
4. Top the mixture with the other sheet of parchment paper and flatten it to ½-inch thickness with a rolling pin.
5. Carefully peel off the top piece of parchment paper and allow the pasteli to cool for 15 minutes.
6. Cut into 10 even-sized bars using a sharp knife or a pizza cutter.
7. Refrigerate the bars for at least 2 hours before serving. Refrigerate leftovers in an airtight container for up to 5 days.
