Earl Grey Chocolate Pots De Crème

Pots de crème are a traditional French desserts dating back to the 17th century. While formally known as a dessert custard, many refer to them as puddings. This delicious take on a classic contrasts the rich chocolatey flavor with a subtle infusion of earl grey tea. The tea’s delicate flavor is what makes this recipe unique. INGREDIENTS
For the Caramel:
¼ cup sugar
2 tbsp. cold water
¼ cup warm water
For the Pudding:
5 egg whites
1½ cups milk
¼ cup heavy cream
1/3 cup granulated sugar
3 Earl Grey tea bags
6 ramequins
1/3 cup dark chocolate
INSTRUCTIONS
1. In a saucepan, add sugar and cold water. Mix well. Place the saucepan on low heat and do not stir, until the mixture turns light brown. Add the warm water. 2. Use a spatula to lightly stir the sugar around, until the sugar has melted and turned golden brown.
3. Turn off the heat and distribute among the ramekins you are using to make the pudding. Set aside.
4. In a saucepan, stir the milk and once little bubbles appear at the edges, turn the heat off. Add the tea bags and infuse for 4 minutes.
5. Remove the tea bags. Add sugar and chocolate to the milk. Stir the milk until sugar and chocolate begins to melt (do not boil the milk). Set aside to cool.
6. In a bowl, whisk together the egg whites and heavy cream. Add this to the milk and sieve the mixture. Divide the mixture into the ramekins.
7. Cover the ramekins with aluminum. Place them onto a baking tray. Pour hot water to reach halfway up the sides of the ramekins to create a bain-marie.
8. Bake in the oven at 150°C for 45–50 minutes, or until the pudding has set.
9. Remove from heat and let the pudding cool before chilling. Let sit in the refrigerator overnight.
