Date Horchata
Serves: 6
A great vitamin packed way to finish off that late night movie at the end of the week.
INGREDIENTS
6 cups water
1 cup white rice
½ cup dates
1½ tsp. vanilla extract
1 cinnamon stick
1 tbsp. maple syrup (optional)
1 cup almond milk
INSTRUCTIONS
1. Heat 2 cups of the water until it is hot, but not quite boiling. Add the rice and soak in the hot water for 2 hours. The rice should be soft, but still raw. Drain and transfer the rice to a blender. Add the remaining 4 cups of water, the dates, vanilla and cinnamon. Blend for about 1 minute. Test for sweetness, and add more dates or maple syrup as needed.
2. Pour the mixture through a cheesecloth into a bowl; discard the pulp. Stir in the almond milk and whisk until well combined. Transfer to a serving pitcher. Serve immediately over ice.
