CUBAN PORK ROAST
Makes 6 servings
Cuban pork is flavored with a garlicky-citrus marinade and slow roasted until it is falling apart and luxurious. With no added sugar, the homemade “mojo” sauce is Keto, and it’s an exciting change of pace for a weeknight dinner. Set the pork to cook before you head to work, and you’ll be greeted with a hot and delicious dinner when you get home.
INGREDIENTS
4½ pounds boneless pork shoulder
Salt, to season
Cracked black pepper, to season
1 large red onion, chopped
¼ cup garlic, minced
2 teaspoons ground cumin
1 tablespoon dried oregano
Juice of 1 orange
Juice of 2 lemons
¼ cup olive oil
INSTRUCTIONS
1. Season the pork all over with salt and pepper.
2. Combine all remaining ingredients in a blender and pulse until smooth. Place pork in a large Ziploc bag, pour blended sauce over meat, and place in the refrigerator to marinate for at least 8 hours or overnight.
3. Transfer pork and its marinade to a slow cooker and cook on low for 8 hours.
4. When ready to serve, slice or shred pork and serve with juices drizzled over the top.
