Coconut and Pineapple Mousse

This dessert always reminds me of vacationing. The rich fruity notes bring back memories of the sea! Since the Mediterranean Diet focuses on healthy fats, this recipe calls for coconut milk and cream. Both help lower “bad” cholesterol, decrease appetite all while increasing energy. Really, what more could you want from a dessert?
INGREDIENTS
¼ cup cold water
1½ tbsp. powdered gelatin
¾ cup coconut milk canned
¾ cup cream of coconut
Salt, to taste
1½ cups heavy whipping cream
2 tbsp. granulated sugar
1 cup pineapple, chopped into small cubes
INSTRUCTIONS
1. In a bowl, pour cold water and add in the gelatin. Set aside and let sit for about 5 minutes.
2. In a small saucepan on medium heat, add the coconut milk, cream of coconut and pinch of salt.
3. Add the gelatin mixture to the warmed coconut milk and stir until all the gelatin has dissolved. Set aside and allow to cool to room temperature.
4. In stand mixer, pour in the heavy whipping cream and add sugar. Mix until whipping cream is light and fluffy and forms soft peaks.
5. Gently add the cooled coconut mixture to the whipped cream and stir until combined.
6. Place the pineapple cubes into the jars, then divide the coconut mixture into the jars. Cover and set overnight.
