Classic Lemon Hummus

This recipe will teach you how to make hummus like a professional! No mezze is complete without a bowl of hummus and some warm pita, but there are many other ways to enjoy this delicious dip too! For example it’s amazing as a sandwich spread!
INGREDIENTS
3 cups cooked, peeled chickpeas
1–2 cloves garlic, minced
3–4 ice cubes
⅓ cup tahini paste
½ tsp. kosher salt
1 lemon, juiced
hot water (if needed)
early-harvest, extra-virgin olive oil
ground sumac powder, to taste
INSTRUCTIONS
1. Combine the chickpeas and garlic in the bowl of a food processor. Purée until a smooth, powderlike mixture forms.
2. With the processor running, add the ice cubes, tahini paste, salt, and lemon juice. Blend for about 4 minutes. If the consistency is still too thick, slowly add a little hot water with the processor running, and blend until you reach the desired silky-smooth consistency.
3. Spread the hummus into a serving bowl and add a generous drizzle of oil. Place a few chickpeas in the middle, if desired. Sprinkle the sumac powder on top. Enjoy with warm pita wedges and your favorite vegetables. Store in the refrigerator for up to 5 days, if desired.
