Chicken Gyro

Serves: 5

You’ll love this simple homemade Greek chicken gyro recipe: pita wraps filled with yogurt-marinated chicken, packed in the flavor of warm spices, with homemade tzatziki sauce and all the extras you love! Here we cook the Greek chicken in a nonstick skillet, but you can also make it on an outdoor grill or in the oven.

 

INGREDIENTS

For the chicken:

1.5 lb. chicken breast
1 cup plain Greek yogurt (you can use reduced-fat or fat-free Greek yogurt if you like)
3 tbsp. extra-virgin olive oil, divided
1 large lemon, juiced
2 tbsp. red wine vinegar
3 garlic cloves, minced
1 tbsp. dried oregano
1 tsp. sweet paprika
1 tsp. ground cumin
1 tsp. ground coriander
generous pinch kosher salt
generous pinch ground black pepper
pinch cayenne pepper (optional)

To serve:

5 pita bread
Smooth Tzatziki (page 200)
1 large tomato, sliced
1 cucumber, sliced
1 green pepper, cored and sliced
1 small red onion, sliced into half-moons
1 cup pitted Kalamata olives

 

INSTRUCTIONS

1. First, marinate the chicken. In a big mixing bowl, combine the yogurt, 1 tbsp. of the olive oil, the red wine vinegar, garlic, oregano, paprika, cumin, coriander, salt, pepper and cayenne, if using, and mix well. Add the chicken and mix to make sure each piece is well coated with the marinade. Cover and refrigerate for at least 30 minutes, or overnight.
2. When ready to cook, heat the remaining tablespoon olive oil in a nonstick skillet over medium-high heat until shimmering but not smoking. Remove the chicken from the marinade and shake off any excess, then add the chicken to the pan. Cook undisturbed on one side for 5 minutes, until browned. Use tongs to turn the chicken over and cook on the other side for another 5 minutes or until chicken is done.
3. To assemble the chicken gyros, warm up the pita bread in the oven. Spread the tzatziki sauce on top, then add chicken and top with tomato, cucumber, green pepper, red onion and olives as you like. Squeeze the lemon over, wrap the pita up and enjoy!
