Chia Seed & Mango Purée with Blueberries
Serves: 2
Chia Seed Pudding is always a great choice! There are so many different fruits that go so well with it and its such a great late night snack.
INGREDIENTS
¼ cup chia seeds
1½ cups almond milk
1 tbsp. honey or agave
½ tsp. vanilla extract
1 drop liquid stevia
1 mango, peeled and pit removed
½ cup blueberries
2 mint leaves
INSTRUCTIONS
Mix the chia seeds, almond milk, honey or agave, vanilla extract and stevia in a bowl until combined. Allow the chia seed mixture to soak for 2 hours in the refrigerator. Purée the mango in a food processor or blender. Fold the mango purée into the chia seed mixture. Divide between two serving dishes and garnish with the blueberries and mint.
