Carpaccio

Recipes don’t get much easier than this. In fact, it is hardly even a recipe—more of an arrangement. The trick with this recipe is to place the beef filet in the freezer until it becomes a little firm and can be sliced paper-thin. The slices of beef with the zesty sauce, arugula and shaved Parmesan served on top of either fresh bread or toasted baguette are the perfect meal to serve up as a shared plate in the warmer months when you’re trying to escape the heat.
INGREDIENTS
1 lb. beef filet
½ cup lemon juice
¼ cup red wine (or red wine vinegar, for a nonalcoholic option)
2 tbsp. chopped parsley
2 tbsp. capers, drained
1 small clove garlic, minced
1 tbsp. minced shallots
1 tbsp. prepared mustard
½ cup olive oil salt, to taste
¼ cup arugula leaves
2 tbsp. freshly shaved Parmesan cheese
INSTRUCTIONS
1. Trim all the fat from the beef, then wrap the filet in foil and place in the freezer for 30 minutes to facilitate slicing.
2. While the meat is in freezer, make the sauce by combining the lemon juice, wine, parsley, capers, garlic, shallots and mustard in a medium bowl. Gradually pour in the olive oil in a steady stream, whisking constantly, then season with salt and refrigerate for at least 20 minutes.
3. Remove the meat from the freezer. With a very sharp, thin knife, slice meat on a diagonal into paper-thin slices.
4. Place the beef slices on a platter or individual plates. Drizzle over a little of the sauce.
5. Sprinkle the arugula leaves and Parmesan cheese over the filet slices.
6. Serve with either fresh or toasted sliced baguette, and with any additional sauce on the side.
