Beef Kofta Patties with Cucumber Salad

These beef kofta cakes with cucumber salad are full of flavor. Prepare to transport your taste buds to a beach in Spain on a nice summer day!. A little vacation without ever leaving the kitchen table—what’s not to love about these kofta patties?
INGREDIENTS
1 lb. ground sirloin
¼ cup plus 2 tbsp. chopped, fresh flat-leaf parsley, divided
¼ cup chopped fresh cilantro
1 tbsp. chopped fresh ginger
2 tsp. ground coriander
1 tsp. ground cumin
½ tsp. ground cinnamon
½ tsp. salt
2 cups thinly sliced English cucumber
2 tbsp. rice vinegar
½ cup plain, fat-free Greek yogurt
1 tbsp. fresh lemon juice
½ tsp. freshly ground black pepper
2 (6-inch) pitas, quartered
INSTRUCTIONS
1. Heat a grill pan over medium-high heat. Combine the beef, ¼ cup of the parsley, the cilantro, ginger, coriander, cumin, cinnamon and salt in a medium bowl.
2. Divide the beef mixture into 4 equal portions and shape each into a ½-inch thick patty. Place the patties in the pan and cook for 3 minutes on each side, or to your desired degree of doneness.
3. Meanwhile, in a medium bowl, combine the cucumber and vinegar and toss well. In a small bowl, combine the yogurt, the remaining 2 tablespoons parsley, and the lemon juice and pepper; stir with a whisk. Arrange 1 patty and ½ cup cucumber mixture on each of 4 plates. Top each serving with about 2 tablespoons of the yogurt sauce. Serve each with 2 pita wedges.
