Almond-Crusted Trout with Swiss Chard
Serves: 4
Baking with almost flour gives fish a nice crisp texture without using much oil. An added plus: almond flour is gluten-free, and a light coating of mustard will help it adhere to the trout fillets. All you need is a splash of white wine to add a hit of acidity to balance the garlicky greens.
INGREDIENTS
1⅓ oz. almond flour (about ½ cup)
4 (4-5-oz.) trout fillets, skin on
1 tbsp. Dijon mustard
2½ tbsp. grapeseed oil or canola oil, divided
½ tsp. kosher salt, divided
½ tsp. black pepper, divided
4 cups thinly sliced Swiss chard leaves and stems (about 5 oz.), divided
3 cloves garlic, thinly sliced
¼ cup dry white wine
1 tbsp. fresh lemon juice
1 tbsp. unsalted butter
1 tbsp. minced fresh chives
4 lemon wedges
INSTRUCTIONS
1. Place the almond flour in a shallow bowl. Brush the flesh side of each fish fillet with mustard, then gently press the mustard side of each fillet into the almond flour, leaving the skin side bare. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add 2 fillets, flesh side down, and cook until golden brown and lightly crispy, 2 to 3 minutes.
2. Flip the fillets and cook until the flesh is flaky and the fish is cooked through, about 4–6 minutes. Transfer to a paper towel–lined plate. Wipe the skillet clean, then repeat with another tablespoon of oil and the remaining 2 fillets. Sprinkle the cooked fillets evenly with ¼ teaspoon of the salt and ¼ teaspoon of the pepper.
3. Wipe the skillet clean. Add the remaining 1½ teaspoons oil to the skillet and heat over medium-high heat. Add the chard and cook, stirring occasionally, until slightly tender, 3 to 4 minutes. Add the garlic and cook, stirring often, until fragrant, about 1 minute. Add the wine and lemon juice and cook until slightly reduced, about 1 minute. Stir in the butter and season with the remaining
4. ¼ teaspoon salt and ¼ teaspoon pepper. Divide the chard mixture among 4 plates. Top each with a fish fillet and sprinkle evenly with chives. Serve each plate with a lemon wedge on the side.
