Zucchini, Pea, & Halloumi Fritters

Makes 10 pancakes

Traditionally made from a mixture of sheep and goat milk, Halloumi dates back to 1191! Loaded with protein and calcium, this salty cheese elevates any recipe—including these fritters. Thanks to the zucchini, this dish may improve digestion, strengthen eyesight, and aid weight loss!

INGREDIENTS:

3 medium zucchinis, grated
1 cup coarsely grated Halloumi
1 cup almond flour
½ cup frozen peas
¼ cup chopped fresh dill or mint
2 eggs, lightly beaten
1½ teaspoons Himalayan salt
½ teaspoon ground black pepper
3 tablespoons extra-virgin olive oil

INSTRUCTIONS:

1. Combine the zucchini, Halloumi, almond flour, peas, dill or mint, eggs, salt, and black pepper in a medium bowl and mix well.
2. Place the olive oil in a large frying pan over medium-high heat.
3. Spoon about 3 tablespoons of the batter per pancake into the frying pan and flatten slightly using a spatula.
4. Cook the pancakes for 3–4 minutes each, flipping halfway through, until golden. Place them onto paper towels to drain.
5. Repeat steps 3–4 until all the batter has been used.
6. Serve warm. Refrigerate leftovers in an airtight container for up to 3 days.
