MAKES 4 SERVINGS

Even though this is a Diabetes cookbook, we wanted to ensure we included a recipe that incorporates zoodles—it’s a keto staple and just such an amazing method to learn! The trend of spiralizing veggies is a dieter’s dream come true. Any hard summer or winter squash will work well in a spiralizer, and you can find a handy spiralizing gadget at almost any grocery store.

 

INGREDIENTS

4 large zucchini, spiralized or shredded lengthwise with a mandolin
2 tablespoons olive oil
Salt, to taste
Cracked black pepper, to taste
2 cups halved cherry tomatoes
1 cup small fresh mozzarella balls
¼ cup fresh basil leaves
2 tablespoons balsamic vinegar

 

INSTRUCTIONS

1. Toss the zucchini noodles with the olive oil in a large bowl. Add salt and pepper to taste, then set aside to marinate for 15 minutes.
2. Add the tomatoes, mozzarella, and basil to the zucchini and stir gently to incorporate. Drizzle the vinegar over the top and serve.
