ZOODLE CAPRESE

Makes 4 servings

There cannot be a Keto cookbook without zoodles—it’s a Keto rule, I’m sure of it! The trend of spiralizing veggies is a dieter’s dream come true. Any hard summer or winter squash will work well in a spiralizer, and you can find a handy spiralizing gadget at almost any grocery store.

 

INGREDIENTS

4 large zucchinis, spiralized or shredded lengthwise with a mandoline
2 tablespoons olive oil
Salt, to taste
Cracked black pepper, to taste
2 cups cherry tomatoes, halved
1 cup small fresh mozzarella balls
¼ cup fresh basil leaves
2 tablespoons balsamic vinegar

 

INSTRUCTIONS

1. Toss zucchini noodles with olive oil in a large bowl. Add salt and pepper to taste, then set aside to marinate for 15 minutes.
2. Add tomatoes, mozzarella, and basil to zucchini and stir gently to incorporate. Drizzle vinegar over the top and serve.
