Zesty 15-Minute Broiled Salmon
Makes 4 servings
This quick recipe is ideal for the middle of the week when you have no time to prepare dinner yourself. The mustard, rosemary and chopped fresh thyme come together to elevate ordinary salmon fillets into a truly elegant meal.
INGREDIENTS:
1 tsp. olive oil
4 (5–6 oz.) salmon fillets
¼ cup Dijon mustard
2 tsp. chopped fresh rosemary leaves
1 tsp. chopped fresh thyme leaves
1 tsp. chopped fresh oregano leaves
1 tsp. kosher salt
¼ tsp. freshly ground black pepper
½ medium lemon
INSTRUCTIONS
1. Preheat the broiler and insert a rack about 6 inches from the heat source. Line a baking sheet with aluminum foil.
2. Rub the oil over the salmon fillets to evenly distribute. Place the salmon skin side down on the prepared baking sheet.
3. Combine the mustard, rosemary, thyme, oregano, salt and pepper in a small bowl. Distribute the mixture evenly over the salmon fillets and spread to coat.
4. Broil for 6–8 minutes, until the salmon is cooked through. For best taste, cook salmon at medium, to reach an internal temperature of 135°F, so it remains moist.
5. Squeeze the lemon half over the salmon and serve
