Watermelon & Mint Salad
Serves: 6
A light, fresh watermelon salad with cucumbers, creamy feta cheese, many fresh herbs and a bright honey-lime dressing! Serve it along with other favorite summer dishes, like grilled chicken skewers, kofta, grilled shrimp, salmon, grilled zucchini salad, guacamole and more! It’s easily the perfect dish for your next neighborhood party!
INGREDIENTS
FOR THE HONEY VINAIGRETTE:
2 tbsp. honey
2 tbsp. lime juice
1–2 tbsp. extra-virgin olive oil
pinch of salt
FOR THE WATERMELON SALAD:
½ watermelon, peeled, cut into cubes
1 English cucumber, cubed (about 2 cups)
15 fresh mint leaves, chopped
15 fresh basil leaves, chopped
½ cup crumbled feta cheese, or more to taste
INSTRUCTIONS
1. Whisk together the honey, lime juice, olive oil and salt in a small bowl. Set aside.
2. In a large bowl, combine the watermelon, cucumbers, and fresh herbs.
3. Top the watermelon salad with the honey vinaigrette and gently toss to combine evenly. Top with the feta cheese and serve!
