Watermelon Lime Drink
Makes 15 servings
The secret ingredient in this refreshingly sweet beverage is the earthy and peppery sage. If you’re new to using agave nectar as a sweetener you are in for a surprise, as it’s not only plant-based, it’s also low on the glycemic index and won’t spike your blood sugar.
INGREDIENTS
10 cups watermelon, cubed
1 cup cold water
¼ cup freshly squeezed lime juice
¼ cup sage leaves, packed
2 limes, cut into wedges
1 tablespoon agave nectar
INSTRUCTIONS
1. Add the watermelon to a blender in batches and process until liquefied.
2. Pour the watermelon liquid through a fine-mesh strainer set over a large bowl and strain until only the pulp remains.
3. Transfer the strained juice to a pitcher, stirring in the water and lime juice, and refrigerate.
4. Muddle the sage, lime wedges, and agave nectar in a small bowl, until fragrant.
5. To serve, put a teaspoon of the muddled mixture in tall glasses, add ice if desired, and pour in the watermelon juice. Stir to combine. Refrigerate leftovers in an airtight container for up to 3 days.
