Watermelon & Feta Salad

If you love salty and sweet duos, this salad is for you! once summer rolls around, I love to experiment with seasonal produce. I recently spotted a ginormous watermelon at my local farmer’s market and knew it was destined for feta, a match made in Mediterranean heaven.
INGREDIENTS
2 tablespoons honey
2 tablespoons lime juice
1–2 tablespoons extra-virgin olive oil
¼ teaspoon salt
½ watermelon, peeled and cubed
1 English cucumber, cubed (about 2 cups)
15 fresh mint leaves, chopped
15 fresh basil leaves, chopped
½ cup crumbled feta cheese
INSTRUCTIONS
1. Whisk the honey, lime juice, olive oil, and salt together in a small bowl and set aside.
2. Combine the watermelon, cucumber, mint, and basil in a serving bowl, mixing well.
3. Drizzle the dressing over the salad, tossing carefully to combine. Top with the feta and serve. Refrigerate leftovers in an airtight container for up to 3 days.
