Warm French Lentil Salad

Nothing is better than digging into this hearty salad on a chilly winter day. Best served in true French fashion—with a fresh whole-wheat baguette— this protein- and iron-rich vegetarian dish will surprise the meat-lovers in your family!

INGREDIENTS

1 cup brown lentils, rinsed and sorted
3 cups water
Juice of 1 lemon
¼ cup extra-virgin olive oil
2 garlic cloves, minced
½ teaspoon salt
½ teaspoon black pepper
1 cup roughly chopped parsley
1 cup halved cherry tomatoes
½ cup crumbled rennet-free feta cheese
¼ small red onion, finely diced
Zest of ½ lemon

INSTRUCTIONS

1. Combine the lentils and water in a pot over medium-high heat and bring to a boil.
2. Lower to medium-low heat and cook for 20 minutes, until the lentils are tender.
3. Meanwhile, whisk together the lemon juice, olive oil, garlic, salt, and pepper in a small bowl. Set aside.
4. Drain the lentils and transfer to a large bowl. Add the parsley, tomatoes, feta, red onion, and lemon zest. Pour the lemon–olive oil mixture over the top and toss to combine.
5. Divide between two serving bowls and enjoy!
