Vibrant Vegetable Wraps with Tahini Sauce

If you’re anything like me, you aim for as much color as possible in your dishes! Not only do they look more appetizing, the colors usually indicate an abundance of nutrients—and this wrap is no exception. Serve with nutty tahini to receive bonus antioxidants and essential Mediterranean-Dieter healthy fats.
INGREDIENTS
½ cup tahini
¼ cup lemon juice
2 tablespoons chili sauce
1 garlic clove, minced
4 large lettuce or collard leaves
½ cup hummus
4 carrots, peeled and cut into matchsticks
2 avocados, thickly sliced
½ head red cabbage, shredded
½ cup basil leaves
½ cup mint leaves
INSTRUCTIONS
1. Whisk together the tahini, lemon juice, chili sauce, and garlic in a small bowl.
2. Place the lettuce leaves onto separate serving plates and spread 2 tablespoons of hummus onto each leaf. Add the carrots, avocados, red cabbage, basil, and mint. Roll up each lettuce wrap.
3. Serve with the bowl of tahini sauce for dipping!
