Vegan Lebanese Fatteh

Fatteh is a traditional Levantine dish, also known as fette, fatta, or fetté. In Egypt, the dish is reserved for special occasions, like celebrating a woman’s first pregnancy or an evening meal for Muslims to break their Ramadan fast. Iron- and protein-rich, this classic dish takes just ten minutes to make.
INGREDIENTS
1 cup tahini
1 garlic clove, minced
2 teaspoons lemon juice
¼ tablespoon kosher salt
1 (15-oz.) can chickpeas, drained and rinsed
¼ cup cashews, toasted
1 teaspoon sumac
2 (6-inch) pitas, toasted and cut into 1-inch pieces
INSTRUCTIONS
1. Whisk together the tahini, garlic, lemon juice, and salt in a small bowl.
2. Combine the chickpeas, cashews, and sumac in a medium bowl, tossing well.
3. Divide the chickpea mixture among four bowls, then add the pita chips on top.
4. Top with the tahini dressing and serve.
