Vanilla Cupcakes with Whipped Cream Frosting

Ingredients:
Cupcakes:
1 ½ cups almond flour
2 tbsp coconut flour
1 ½ tsp baking powder
¼ tsp salt
3 eggs, room temperature
¼ cup unsweetened almond milk
¼ cup melted butter or coconut oil
¼ cup powdered monk fruit sweetener
1 tbsp vanilla extract
Whipped Cream Frosting:
½ cup heavy whipping cream
1 tbsp powdered monk fruit sweetener
½ tsp vanilla extract
Instructions
1. Preheat: Preheat oven to 350°F (175°C). Line a muffin tin with 8 cupcake liners.
2. Mix Dry Ingredients: In a mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt.
3. Mix Wet Ingredients: In a separate bowl, beat together the eggs, almond milk, melted butter, sweetener, and vanilla until smooth.
4. Combine: Add the dry ingredients to the wet and mix until just combined. Let the batter rest for 2–3 minutes to thicken slightly.
5. Bake: Divide evenly among the cupcake liners and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool: Let cool completely before frosting.
7. Make the Frosting: Whip the cream, sweetener, and vanilla together until soft
