Tuscan Tuna Salad

A delicious flavor combination celebrating all things Tuscan! What really make this tuna salad sing are the zinging pops of flavor from the capers and the peppery, earthy tones from the arugula. Unlike what you get with other salads, you will find this one is very satisfying and filling. Bursting with nutritional goodness, loaded with protein and fiber, this meal will have you feeling on top of the world and keep you going right through to the evening. The recipe is also quite versatile. Feel free to substitute other proteins, such as salmon or cooked chicken, for the tuna. You could even just increase the amount of chickpeas and omit the tuna for a vegetarian option.
INGREDIENTS
14 oz. canned tuna in water, drained
8 oz. canned chickpeas, drained and rinsed
3 cups arugula leaves
1 large tomato, seeded and diced
1 small/medium cucumber, halved lengthwise and sliced
½ cup thinly sliced red onion
⅓ cup sliced olives
2 tbsp. capers
2 tbsp. chopped fresh basil leaves
¼ cup Italian dressing
INSTRUCTIONS
1. Combine all the ingredients except the dressing in a bowl. Add the Italian dressing and lightly toss together.
2. Divide among serving bowls and serve immediately.
