TURKEY TACO WRAP
Makes 4 servings
Lean and delicious, turkey is a fun way to reboot your taco meals. Use this mix for wraps, quesadillas, or enchiladas anytime you want to level up your Mexican food game. You can even mix your own Mexican seasoning at home to personalize the taste.
INGREDIENTS
3 tablespoons olive oil
1 cup onion, chopped
½ cup bell pepper, chopped
1 pound ground turkey
1 (1-ounce) packet taco seasoning
½ cup salsa
1 large avocado, pitted and diced
1 cup tomato, diced
¼ cup cilantro, optional
4 (10-inch) veggie tortillas
INSTRUCTIONS
1. Heat olive oil in a frying pan over medium heat. Add onion and bell pepper, and sauté until onions are soft, about 10 minutes. Add turkey and sauté until cooked through and crumbled, 5–6 minutes.
2. Add taco seasoning and salsa and stir to combine. Reduce the heat to low, cover, and simmer for 5–10 minutes, or until flavors have combined.
3. To serve, fill wraps with meat mixture and top with avocado, tomato, and cilantro, if desired.
