Tuna Salad on Toast

Portofino tuna can be the focal point of any Mediterranean dish! Available in albacore or yellowfin cans, the fish adds a touch of elegance to this lunch time classic. When you’re low on time and need a quick snack, this vitamin B12-packed recipe will always hit the spot.
INGREDIENTS:
2 (5-oz.) cans tuna in water, drained
¼ cup light mayonnaise
1 stalk of celery, diced
2 tablespoons diced red onion
1–2 tablespoons chopped parsley, chives, or other herbs
½ tablespoon Dijon mustard
1 teaspoon ground black pepper
½ teaspoon salt
4 slices whole-wheat bread, toasted
INSTRUCTIONS:
1. Combine the tuna, mayonnaise, celery, red onion, parsley, mustard, pepper, and salt in a bowl. Stir until thoroughly combined.
2. Spread the tuna salad over the toast slices and serve!
