Tuna & Artichoke Salad

The tried-and-true tuna salad gets a much-needed upgrade with this recipe. Vitamin C-packed spinach blended with antioxidant-rich artichoke hearts and tuna chock-full of protein make this dinner one of the most nutritious options out there! If you’re in the mood to play around, sprinkle in some seeds and nuts for added crunch.
INGREDIENTS
1½ tablespoons tahini
1½ tablespoons lemon juice
1½ tablespoons water
1 (5-oz.) can light tuna in water, drained
½ cup chopped artichoke hearts
4 black olives, pitted and chopped
2 tablespoons chopped fresh parsley
2 cups baby spinach
INSTRUCTIONS
1. Whisk together the tahini, lemon juice, and water in a medium bowl.
2. Add the tuna, artichokes, olives, and parsley, stirring to combine.
3. Place the spinach leaves in a serving bowl and top with the tuna mixture. Serve and enjoy!
