Triple Chocolate Jumbo Cookie
Makes 6 servings, 12 cookies
What’s better than a cookie? A jumbo cookie. At least, that’s what my kids think. I created this recipe for my daughter’s birthday. She’s a chocolate lover (I mean who isn’t?) and wanted a cookie she could “share with all her friends.” I was so proud of her desire to share that I baked her this cookie. This dish makes a great dessert for large gatherings because everyone can take however much they want and garnish however they’d like! Although, as is recommended below, my go-to is always ice cream.
INGREDIENTS
2/3 cup unsalted butter
2/3 cup brown sugar
1/3 cup granulated sugar
1 egg
1 egg yolk
1 tsp. vanilla extract
1 2/3 cup all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt
½ cup dark chocolate chips
½ cup milk chocolate chips
½ cup white chocolate chips
Ice cream, to serve (optional)
INSTRUCTIONS
1. Preheat oven to 350°F and grease a 9-inch cake pan. Set aside.
2. In a stand mixer, add both butter and sugars, beat for 2 minutes until fluffy. Add egg, egg yolk, and vanilla.
3. Add flour, baking soda and salt, and mix until combined. Turn off mixer and fold in the chocolate chips. Place the cookie dough into the cake pan and press down gently.
4. Bake for 22–25 minutes until the top is golden brown. Let the cookies cool completely. If desired, serve with favorite ice-cream.
