Tangy Tuna Sandwich

This speedy Tangy Tuna Sandwich is a delicious way to start your day. If your mornings are rushed, try whipping this up the night before—it allows the flavors to really meld. Thanks to the apples and pickles, this meal offers a satisfying crunch!
INGREDIENTS:
2 (5-oz.) cans tuna in oil, drained
5 pickles, thinly sliced
½ apple, thinly sliced
½ cup light mayonnaise
¼ cup fresh cilantro, chopped
3 tablespoons thinly sliced chives
1 tablespoon Dijon mustard
1 tablespoon unsalted butter
6 slices gluten-free bread, toasted
1 medium tomato, sliced
½ cucumber, sliced
INSTRUCTIONS:
1. Combine the tuna, pickles, apple, mayonnaise, cilantro, chives, and Dijon mustard in a medium bowl, mixing well, until thoroughly combined.
2. Spread the butter onto the toasted bread slices and top three with the tuna mixture, tomato slices, and cucumber slices. Finish by placing the remaining buttered slices on top and serve.
