Strawberry Mousse

Makes 4 servings

When heat hits in June and July, I always celebrate the weather with this dish. The light and fluffy texture of Mousse makes a lightweight dessert that still satisfies your sweet tooth. With only four ingredients, it doesn’t get much simpler than this recipe. Even my kids have taken to cooking this for our family on weekends. The great thing about Mousse is that they’re quite versatile! You can swap out the strawberries for whatever in season fruits you have available.

INGREDIENTS

1 cup fresh strawberries
¼ cup granulated sugar
1 cup heavy whipping cream
Zest of one medium lemon

INSTRUCTIONS

1. In a blender, puree the strawberries and sugar.
2. In a stand or hand mixer, whip the heavy whipping cream until stiff peaks form.
3. Combine the two mixtures with a spatula. Add the lemon zest. Combine it just until it comes together. If you stir too much, the mixture will flatten.
4. Divide the mix into 4 jars and place them into the fridge for 5 hours or overnight.
