SMOTHERED CHICKEN

INGREDIENTS

4 chicken thighs
1 teaspoon Good for Everything Seasoning (page 28)
2 tablespoons olive oil
1/3 cup chicken bone broth
½ cup mushrooms, chopped
¼ cup whipping cream
4 slices bacon, chopped and cooked crisp

INSTRUCTIONS

1. Preheat the oven to 400°F.
2. Pat chicken dry and season with Good for Everything Seasoning. Heat olive oil in an oven-safe pan. Add chicken and cook for 4 minutes, then turn chicken over and transfer the pan to the oven. Bake 30 minutes, or until chicken reaches an internal temperature of 165°F.
3. Remove chicken from the pan and set aside, covered. Add chicken broth to the hot skillet and place over medium-high heat. Cook, stirring to combine pan juices and broth, for 3 minutes. Add mushrooms and cook for 4 minutes, or until soft. Whisk in cream and reduce the heat to low. With sauce at a simmer, add chicken back to the pan. Spoon sauce over the chicken to coat.
4. Serve chicken hot, garnished with bacon. You can also garnish with shredded cheese of your choice, if desired.
