Smoked Salmon & Feta Sandwich

Easy lunch recipes can be hard to come by, but this simple yet decedent sandwich solves that problem, allowing you to get dinner on the table in minutes. And the extra protein will keep you feeling full all day long!
INGREDIENTS
1 red onion, sliced
2 tablespoons red wine vinegar
1 teaspoon salt, divided, plus more to taste
⅓ cup crumbled feta cheese
2 tablespoons pomegranate seeds
1 teaspoon extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon chopped chives
¼ teaspoon black pepper, plus more to taste
2 slices whole wheat bread
4 ounces smoked salmon
4 radishes, sliced
INSTRUCTIONS
1. To pickle the onion, combine the red onion, vinegar, and ½ tsp. of the salt in a bowl and set aside for 15 minutes, stirring occasionally, until the onions soften.
2. Combine the feta, pomegranate seeds, olive oil, lemon juice, chives, the remaining ½ tsp. of salt, and the pepper in another bowl.
3. Spread the feta cheese mixture onto each slice of bread and add the smoked salmon and radishes.
4. Top the salmon with the pickled onions. Serve and enjoy!
