Simple Mediterranean Salad

Meaty artichoke hearts, protein-packed hard-boiled eggs, salty goat cheese, and sharp olives take romaine lettuce to completely new heights. Serve this recipe alone for a light dinner, serve as a side salad with Chicken Penne (page 234) or Roasted Red Pepper Mac & Cheese (page 242), or top each portion with some Mediterranean Meatballs (page 244).
INGREDIENTS
2 cups romaine lettuce
2 hard-boiled eggs, sliced
1 cup sliced artichoke hearts
1 cup roasted red peppers, sliced
¾ cup diced cucumbers
¾ cup crumbled goat cheese
½ cup black olives
2 tablespoons fresh basil, chopped
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
INSTRUCTIONS
1. Combine the lettuce, hard-boiled eggs, artichoke hearts, roasted red peppers, cucumbers, goat cheese, olives, and basil in a large serving bowl. Toss to mix.
2. Whisk together the olive oil, red wine vinegar, oregano, basil, salt, and pepper in a small bowl, then drizzle the dressing over the salad.
3. Divide between two bowls and serve!
