Simple Italian Salad

Known in Europe as “rocket” and in North America as “arugula,” this leafy green is commonly used in Mediterranean salads and pizzas. Its peppery flavor is paired with savory Parmesan and tart sun-dried tomatoes here for a classic Italian salad. Serve as summertime appetizer or light dinner.
INGREDIENTS
1 cup arugula
½ cup loosely packed fresh basil leaves
½ cup sun-dried tomatoes
½ cup sliced white mushrooms
½ cup grated rennet-free Parmesan cheese
¼ cup whole walnuts
2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
INSTRUCTIONS
1. Combine all the ingredients in a serving bowl and toss until combined.
2. Serve and enjoy!
