Simple Greek Salad
Serves: 6
To this day, I still think a nice and Simple Greek Salad is the best late-night or mid-afternoon snack. Light, fresh and crisp, it’s just the perfect thing to hold you over until that next meal!
INGREDIENTS
4 cups mixed salad greens (spinach, arugula, kale, watercress, romaine, etc.)
3 medium tomatoes, diced (or 1½ cups halved cherry tomatoes)
1 large cucumber, sliced
1 cup feta cheese, crumbled
4 scallions, sliced
12 ripe black olives, pitted
1 tbsp. balsamic vinegar
⅓ cup Italian Dressing
INSTRUCTIONS
1. Combine the greens, tomatoes, cucumber, feta cheese, scallions, olives, and vinegar in a large serving bowl.
2. Drizzle with the dressing and lightly toss together.
3. Let stand for up to 15 minutes before serving to allow the flavors to combine.
