Simple Goat Cheese Salad

Goat cheese is the secret ingredient in this simple salad! Packed with nutrients, goat cheese increases satiety, improves digestion, and boosts bone health. This recipe makes the perfect side salad or appetizer. If you’re feeling experimental, use a goat cheese you’ve never tried before.
INGREDIENTS
3 tablespoons walnut oil
2 tablespoons red wine vinegar
1 teaspoon black pepper
¼ teaspoon salt
8 cups baby spinach leaves, destemmed
½ cup whole walnuts
⅓ cup crumbled goat cheese
2 tablespoons sugar-free dried cranberries
INSTRUCTIONS
1. Whisk together the oil, red wine vinegar, pepper, and salt in a large bowl.
2. Add the spinach, tossing until the spinach is coated in the dressing.
3. Add the walnuts, goat cheese, and cranberries and toss to combine. Serve and enjoy!
