SCALLOPED BUTTERNUT SQUASH

Butternut squash baked in cheese is my new favorite side dish. I have a weakness for sweet and savory flavors, and this recipe pairs them together perfectly. Here’s a tip: Add a jar of Alfredo sauce to this recipe and you have a delicious butternut carbonara.
INGREDIENTS
2 pounds butternut squash cubes, fresh or frozen
2 tablespoons olive oil
2 tablespoons garlic, minced
1 teaspoon dried thyme
Salt, to taste
Cracked black pepper, to taste
1½ cups mozzarella cheese, shredded
½ cup Parmesan cheese, grated
1 cup bacon, cooked and crumbled
INSTRUCTIONS
1. Preheat oven to 425°F. Grease a 9-x-13-inch baking dish.
2. Toss butternut squash, olive oil, garlic, thyme, salt, and pepper together in the baking dish. Bake until squash cubes are cooked through and tender, about 30 minutes.
3. Top squash with mozzarella, Parmesan, and bacon. Bake for 5–10 more minutes, until the cheese topping has melted. Serve hot.
