Salted Caramel Almond Bars
SERVINGS: 12 BARS
These layered bars deliver the perfect combo of crunchy almonds, buttery caramel flavor, and a hint of sea salt —all wrapped in a simple no-bake format. They’re sweet, salty, and completely satisfying with none of the added sugar.
Ingredients:
Caramel Almond Layer
⅓ cup almond butter
¼ cup coconut oil
¼ cup powdered monk fruit sweetener
1 tsp vanilla extract
½ tsp maple extract (optional for caramel-like flavor)
½ cup chopped roasted almonds
Pinch of sea salt
Topping
Sprinkle of flaky sea salt
Optional: drizzle of sugar-free chocolate or extra crushed almonds
Crust Layer
1 cup almond flour
2 tbsp melted butter
1 tbsp powdered monk fruit sweetener
Instructions
1. Make the Crust: Combine almond flour, butter, and sweetener. Press into the bottom of a parchment-lined 8x8-inch pan. Chill while you make the filling.
2. Make the Caramel Almond Layer: In a saucepan over low heat, melt almond butter and coconut oil. Stir in sweetener, vanilla, and maple extract. Mix until smooth, then fold in the chopped almonds and a pinch of sea salt.
3. Assemble the Bars: Pour the warm caramel almond mixture over the crust and spread evenly. Sprinkle with flaky sea salt.
4. Chill: Refrigerate for 1–2 hours until firm. Slice into 12 bars.
5. Optional: Drizzle with melted sugar-free chocolate or top with extra almond pieces before serving.
