SALMON BROCCOLI SALAD

Makes 4 servings

Perfect for a family picnic, Salmon Broccoli Salad is a light and fresh dish that’s loaded with antioxidants and omega-3s. Since the recipe calls for smoked salmon, this salad takes just ten minutes to prepare. Double the recipe to make it a main course, or keep as-is for a satisfying side dish.

 

INGREDIENTS

9 ounces smoked salmon
1 head of broccoli
6 slices bacon, well cooked and chopped
½ cup red onion, diced
½ cup provolone cheese, shredded
1/3 cup sunflower seeds, roasted
2 tablespoons chia seeds
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 red bell pepper, julienned

 

INSTRUCTIONS

1. For the dressing: In a bowl, mix mayo and apple cider vinegar.
2. In a large bowl, mix the salad ingredients. Add the dressing and combine well.
3. Chill for 1 hour before serving.
