Saganaki Prawn Stew

Have you always wanted to visit Greece? Why not make this stew, inspired by the traditional Greek fried-cheese dish saganaki, to bring a little bit of Greek culture right into your home? While saganaki is usually served flambéed at the table in North American Greek restaurants, here you won’t be setting the cheese on fire, but instead broiling it over a lovely stew with prawns and tomatoes. Saganaki Prawn Stew is the perfect comfort food for movie nights—providing a real burst of flavor, it’s a fun food to eat and so quick to make!

 

INGREDIENTS

¼ cup olive oil
1 red onion, finely chopped
2 cloves garlic, finely crushed
1 large red chili pepper, finely chopped
1 bell pepper, any color, finely chopped
8 oz. fresh prawns
7 oz. tomatoes (about 2 large)
¼ cup fresh flat-leaf parsley, finely chopped, plus more for garnish
3 tbsp. ouzo
Salt, to taste
Black pepper, to taste
3.5 oz. feta cheese

 

INSTRUCTIONS

1. Preheat the oven to 300°F.
2. Heat the oil in a large, deep skillet over medium-high heat. Add the onions, garlic, chili pepper and bell pepper. Cook, stirring, until the vegetables soften and the onions become transparent.
3. Add the prawns and sauté for a few minutes or until pink throughout.
4. Purée the tomatoes in a blender, then add to the skillet. Add the parsley, ouzo, and salt and pepper, to taste. Bring to a boil, then immediately reduce the temperature to medium-low and stir for about 10 minutes.
5. Transfer the prawn mixture to an oven-safe ceramic bowl and add the feta cheese on top. Place the bowl in a roasting pan and bake until the cheese melts and seeps into the sauce.
6. Remove from the oven, garnish with additional parsley and serve.
