Rustic Avocado and Corn Salad
MAKES 2 SERVINGS
Here’s the perfect light meal for lunch that you can easily customize to your own taste and preferences. High in calcium and fiber, it can be made in a matter of minutes and served with your favorite chicken or fish.
INGREDIENTS
2 avocados, diced
2 medium red onions, diced
2 cups cherry tomatoes
2 cups sweet corn
1 cup feta cheese
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh parsley
2 tablespoons Italian dressing
1 lime, juiced
Salt, to taste
Pepper, to taste
INSTRUCTIONS
1. Arrange the avocado, onion, tomatoes, corn, and feta cheese in 2 medium bowls, giving each ingredient its own section and filling in all the gaps.
2. Sprinkle the cilantro and parsley over the top. Drizzle the dressing and the lime juice over the salad, then season with salt and pepper to taste.
3. Serve with grilled chicken or salmon, or with our own favorite, the Caprese Chicken on page 32.
