Rosemary & Garlic Salmon

Rosemary and garlic both have an established history in alternative medicine. Rosemary is thought to help wounds heal faster and lower your risk of infection. Garlic, from the onion family, boosts immune function and reduces blood pressure. If you’re feeling ravenous, pair this dish with the Mediterranean Edamame Salad (page 184).
INGREDIENTS:
4 medium salmon fillets, skin on
2 tablespoons tomato paste
3 garlic cloves, minced
1 tablespoon dried rosemary
2 teaspoons finely diced red chili pepper
1 teaspoon salt
1 teaspoon + ¼ cup extra-virgin olive oil, divided
1 lemon, cut into wedges
INSTRUCTIONS:
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Arrange the salmon on the prepared baking sheet with the skin side down.
3. Brush the salmon fillets with a thin layer of tomato paste.
4. Mix the garlic, rosemary, chili pepper, salt, and 1 teaspoon of the olive oil together in a small bowl. Spread the mixture over the fillets, then pour 1 tablespoon of olive oil over each fillet.
5. Bake for 15 minutes, or until your desired level of doneness is met.
6. Remove from the oven and allow to cool for 3 minutes. Garnish with the lemon wedges and serve!
